Custom Waxed Patty Paper
Dry wax squares that separate raw patties, lift cold cuts and hand over cookies without sticking. Order them plain, or printed with a small mark for a retail meat case or a bakery counter.
What Are Waxed Patty Paper?
Waxed patty paper is a small square of dry wax stock placed between burger patties so a stack separates cleanly in the cooler or freezer. Delis and bakeries use the same squares as pick-up sheets. We supply them plain or printed on the outside face only.

Waxed Patty Paper Sizes
Standard sizes carry no cutting charge. Any other size is quoted on request; the deli paper size chart lists what each one wraps.
Waxed Patty Paper on the Prep Line
Waxed patty paper sits between raw burger patties so a stack pulls apart one at a time. Each sheet is dry wax stock, a soft white paper with wax worked into the fiber rather than coated on top. It feels matte and slightly slick, and it does not stick to cold ground beef.
Butcher counters, burger bars, smash-burger trucks and commissary kitchens all go through it by the case. A prep cook portions patties on Monday, layers them with squares, and the grill cook peels them off all week. Delis use the same squares to lift cheese slices and cold cuts, and bakeries use them to hand over a single cookie.
Why Use Dry Wax Between Raw Patties?
Ground beef is wet, fatty and sticky when it is cold. Plain paper soaks up the moisture, bonds to the meat and tears when you pull. Dry wax stays whole, so the patty comes off clean with its shape intact.
The wax also slows the stack from drying out at the edges in the walk-in. Patties stay round and the top one does not go gray before service. Grease-resistant stock will separate patties too, but it costs more for a job that dry wax does well, so most kitchens keep dry wax here and save grease-resistant for the wrap.
One rule to remember: dry wax is for cold and warm holds, not the oven or the microwave. It is a separator and a pick-up sheet, never a cooking surface.
Which Waxed Patty Sheet Fits a Quarter-Pound Patty?
Match the square to the pressed patty, not the raw ball. A patty should sit inside the sheet with a margin on every side so your fingers find paper, not meat. Here is how the three stock squares line up with common portions.
| Sheet size | Patty it separates | Where it is used |
|---|---|---|
| 4.75 x 5 | Sliders and 2 oz smash balls | Smash counters, slider trays, kids portions |
| 5.5 x 5.5 | Quarter-pound patties up to about 4 inches across | Most burger lines and butcher cases |
| 6 x 6 | Third-pound and half-pound patties, double stacks | Steakhouse burgers, retail meat trays |
| Custom | Oversized or oblong portions | Hoagie-length patties, sausage sheets |
If you press two patty sizes, buy the larger sheet for both. One run of 6 x 6 squares is simpler to reorder than two sizes that run out on different weeks.
Printing a Mark on Waxed Patty Paper
Most patty paper is plain, and that is fine for the walk-in. Printing earns its place when the sheet leaves the kitchen: a retail meat case, a farm store, a butcher who sells pre-portioned patties by the dozen. A small logo on every square tells the shopper who ground the beef.
We print on the outside face only with food-safe soy and water-based inks, so the side that touches meat stays bare. One spot color is the right call here. A single dark mark in the corner reads on white stock and does not fight with the meat behind it.
Dry wax is absorbent, so fine type and hairlines soften. Keep the wordmark bold and over about a quarter inch tall, and let the proof thicken anything thin. Repeat patterns work on patty squares too, but a corner mark leaves more plain paper for your hands to grip. The guide on how spot colors print on deli paper shows the difference on a real sheet.
Cold Holds, Freezer Stacks and the Flat-Top
In the walk-in, stacked patties with sheets between hold their shape for days. In the freezer, the sheets keep patties from fusing into one block, and you can pull a single frozen patty without thawing the stack. Let the sheet come off before the patty hits the grill; the wax is not meant to touch a hot surface.
On a busy flat-top the grill cook peels, slaps and presses in one motion. A sheet that is too small leaves meat on meat at the edges and the stack glues together. A sheet that is too large folds under the patty and gets pressed into the crust, which is the usual cause of paper on a burger.
Warm holds are fine. A square under a cooked patty in a hotel pan keeps the bottom from sticking to steel for a short hold.
Dispenser Cartons and Keeping Count
Sheets ship flat in a dispenser carton, like the ones in the photos. Punch out the half circles, peel the perforation back and the top sheet lifts out with one hand while the other holds the patty. The carton sits on the prep table or clips under a shelf.
Count usage by the print run, not the sheet. A line that presses 300 patties a day uses 1,000 sheets in a little over three days, so the minimum order is a starting point rather than a stock level. Most burger lines order several thousand at a time and keep a spare carton behind the one in use.
Reorders of a printed square come back from the same approved proof. Tell us the quantity and the date you need it, and the run goes to print without a new proof unless you change the artwork.
Does Waxed Patty Paper Work as a Pick-Up Sheet?
Yes, and many delis buy it for that reason alone. The 6 x 6 square is the right size to lift a slice of provolone, a brownie, a fried chicken thigh at the counter or a single donut into a bag. The wax keeps icing and oil off fingers for the few seconds it takes.
Candy stores and chocolate counters lean on the smaller squares to hand over a truffle or a square of fudge. Bakeries slide one under a cookie before it goes into a glassine bag so the bag stays clean, and the same shops often pair the squares with wax paper bags for bakery counters.
Patty Paper Habits That Waste Sheets
A few things we see kitchens do that cost them money or put paper where it should not be.
- Buying a sheet smaller than the pressed patty, so the stack sticks at the edges and sheets tear on the pull.
- Using two sheets per patty because the first one tore. The fix is dry wax stock, not more paper.
- Leaving the sheet on through the first flip. Pull it before the patty lands on the grill.
- Storing cartons next to the fryer, where heat softens the wax and sheets cling together.
- Printing a tiny logo with thin lines that soften into a smudge on absorbent stock.
- Ordering one carton at a time for a four-location group; one print run split by location is easier to track.
From Sample Sheet to Approved Print Run
Ordering printed patty paper takes about two weeks from first message to cartons on the dock.
- Send the quote form with your patty size, sheet size, sheet count and whether you want plain or printed squares.
- You get a written quote within one business day with the stock, size, color count and delivery spelled out.
- Attach your logo. A vector PDF, AI or EPS file is best, and a clear photo of your sign is enough for us to redraw a simple wordmark free.
- Approve the free PDF proof, or ask for changes until it is right. Nothing prints before you sign off in writing.
- Printing takes 4 to 6 business days after approval, then free tracked delivery reaches any US address in 2 to 3 business days.
You pay by invoice after approving the quote, never up front. If a run arrives damaged or misprinted, report it within 10 days with photos and we reprint or refund it. To start, request a waxed patty paper quote and we reply within one business day.

Waxed Patty Paper Questions
The questions we answer most weeks. Pick a topic, open a row.
Is waxed patty paper waxed on both sides?
Dry wax stock carries wax through the whole sheet, so both faces release from cold meat. The printed face is the outside; the side that touches the patty stays unprinted.
Can waxed patty paper go on the grill under the patty?
No. Pull the square off before the patty touches the flat-top. Dry wax is for cold and warm holds, not the oven, grill or microwave.
Which waxed patty paper size suits a smash burger line?
The 4.75 x 5 square covers a 2 to 3 oz ball once it is pressed, with room for fingers at the edge. Lines that smash larger portions move up to 5.5 x 5.5.
Can I order waxed patty paper without any print?
Yes. Plain white squares are quoted the same way, with the same 1,000 sheet minimum per size and the same free delivery. The patty and fry paper range lists the plain and printed options side by side.
How many colors can be printed on waxed patty squares?
One, two or three spot colors, or full color on the white stock. For patty paper a single dark spot color in one corner is usually the clearest choice.
Will ink from printed patty paper transfer to raw meat?
The print sits on the outside face only, in food-safe soy and water-based inks, and the meat-contact side is left bare.
Does waxed patty paper stop frozen patties from sticking together?
Yes. A sheet between every patty keeps a frozen stack from fusing, so you can lift one patty at a time straight from the freezer.
How is waxed patty paper packed for delivery?
Squares ship flat in dispenser cartons with a punch-out opening. Cartons go into an outer shipping box and travel by free tracked delivery to any US address.
How long does a printed waxed patty paper order take to arrive?
Allow 4 to 6 business days for printing after you approve the proof, then 2 to 3 business days in transit anywhere in the US.
Can I split a waxed patty paper run between two restaurant locations?
Ask on the quote form and list both addresses. The written quote confirms how the cartons are split before anything prints.
Can I reorder the same printed patty paper later?
Yes. We keep your approved proof, so a reorder goes straight to print unless you change the artwork, size or stock.
Can a butcher shop use waxed patty paper under retail meat trays?
Yes. A printed 6 x 6 square between each portion in a retail tray separates stacked patties and shows the shop logo through the case.
